How to Make Creamy Red Sauce Mushroom Sandwich?

This saucy mushroom-stuffed sandwich is a quick, simple and healthy meal replacement to satisfy your taste buds. This tempting sandwich is perfect for people on a diet or in the gym. This mushroom sandwich recipe brings the flavors of fine Indian cuisine to your home, just like one of my Szechuan Grilled Cheese Sandwich recipes.

Mushroom sandwich ingredients:

  • 6 cloves of garlic
  • 8 cashews
  • 6 Kashmiri red chilies
  • 4 slices of bread
  • 1 tbsp of tamarind pulp
  • 1/2 tablespoon sugar or jaggery
  • 1 cup mushrooms (sliced)
  • 1 teaspoon of cumin powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon of coriander powder
  • 2 tablespoons of butter
  • 5 curry leaves
  • 1 tablespoon fresh coriander (chopped)
  • 2 cheddar or mozzarella cheese slices 
  • A pinch of turmeric
  • Salt to taste

Directions-Mushroom Sandwich:

  1. Prepare the red sauce paste:
    • Soak the six Kashmiri-dried red chilies in warm water for 15 minutes until soft.
    • Grind the soaked chilies, garlic cloves, cashews, tamarind pulp, and sugar or jaggery.
    • Pulse until everything becomes a paste.
    • Add a little water, if necessary.
  2. Cook the mushrooms:
    • Heat 2 tablespoons of butter in a pan over medium heat.
    • Add the curry leaves, and let them sizzle.
    • Add the sliced mushrooms.
    • Sauté until golden brown.
  3. Add Spices:
    • Add the prepared spicy red sauce paste to the mushrooms.
    • Cook for about 5 minutes.
    • Stir until the mushrooms are well cooked.
  4. Season:
    • Add cumin, coriander, black pepper, and turmeric.
    • Stir for a while, and add salt to taste.
    • Continue cooking for 5–7 minutes.
    • Garnish with coriander and let it cool down.
  5. Assemble the sandwich:
    • Heat the pan and apply butter.
    • Toast both sides of the bread for a minute.
    • Place the mushroom mixture on a slice of bread.
    • Top it with one cheese slice, and close it.
  6. Serve:
    • Cut the sandwich into halves and serve with love.
