Vegetarian Focaccia Sandwich Ingredients:

  • 4 slices of focaccia bread
  • 4 slices of fresh mozzarella or provolone cheese
  • 1/2 cup roasted red peppers
  • 1/2 cup of zucchini slices
  • 1/4 cup sun-dried tomatoes
  • 1/2 cup of fresh basil leaves
  • 1/4 red onion, thinly sliced
  • 1/2 avocado, thinly sliced
  • 2 tablespoons of pesto sauce
  • 1 tablespoon of olive oil
  • Salt to taste
  • 1/2 tablespoon pepper

Instructions:

  1. Prepare the Focaccia
    • Slice the focaccia into sandwich-sized portions.
    • Drizzle olive oil on the inner sides of the focaccia.
    • Now, spread one tablespoon of pesto sauce on top.
  2. Assemble the sandwich
    • Layer the mozzarella cheese, red pepper, zucchini, sun-dried tomatoes, and red onion on the bottom half of the focaccia.
    • Top with fresh basil leaves and avocado slices.
  3. Season and Close
    • Season with salt and pepper. Adjust the taste accordingly.
